
Kerala style vegetable stew

Ingredients
1 medium sized onion sliced
1 potato cubed
3 medium sized carrots cubed
1 cup cauliflower florets
1/2 cup frozen green beans
3 to 4 green chilly silted
1 tsp of ginger chopped or crushed
2 to 3 tbsp of oil ( I used coconut oil)
3 to 4 cardamom pods crushed
1 cinnamon stick
2 to 3 cloves
1 string of curry leaves
1 can of coconut milk ( I used Chaokoh coconut milk can )
Homemade Garam Masala ( Will publish later how to make your own Garam Masala)
Black pepper powder
Salt to taste 1 tsp
Instructions
Heat coconut oil in a pan.
Add cardamom pods, cinnamon stick and cloves .
Add chopped ginger, curry leaves and green chilly .
Once its salute well, add sliced onion and salute well until it become translucent. ( Add little salt while saluting onion makes it quicker )
Once onion become translucent, add Garam Masala and black pepper powder , then cook for about 2 minutes.
When the masala forms a nice aroma, add all the vegetables ( cauliflower, green beans, carrots and potato ) into the pan and stir well.
Add half cup of water with 4 spoons of coconut milk from the can and mix well.
Cover the lid and cook the vegetables for 15 to 20 minutes in a medium low flame until the vegetables are half cooked.
Now add remaining coconut milk to the pan and cook well until vegetables are cooked well.
It takes another 10 -15 minutes.
our vegetable stew is ready to serve after adding some fresh curry leaves .
( vegetables can be steamed separately, but I like the vegetables cooked with coconut milk . It taste better for me )
