Kerala style Idiyappam
( Nool Puttu )
Ingredients
1 cup of Roasted Rice flour ( if you donot have Roasted rice flour , just roast rice flour in low flame 5 to 10 minutes. It makes the Idiyappam soft. Continue roasting the rice flour until steam coming from flour. Don’t brown the flour )
1 and half cup of water
Salt 1/2 tsp or as needed
Oil 1/2 tsp
Water enough for steaming the rice noodles
Instructions
Preparing the dough
Add 1 and 1/2 cup of water , salt and oil in a kadai vessel and start to boil.
When you see tiny bubbles ( that’s the time it’s starting to boil ) switch of the flame.
Then add this water to the Roasted rice flour and mix well it with wooden spatula.
Once everything is mixed well, start to knead well with your hand.
If it’s too hot to knead well, wait to cool down a bit and start to knead. (shouldn‘t allow the dough to cool down completely before kneading)
Knead nicely and keep it for 5 minutes.
Making Idiyappam
Take the steamer and fill with desired water to steam.
Apply oil or spray oil to the Idiyappam ( Idli ) plate.
Divide the dough into small portions and roll it in oblong shape.
Apply little oil inside of Idiyappam presser before load it with dough.
Once it’s loaded, press it to the Idiyappam plate.

Once dough is pressed ( can pressed in any way you prefer).
Transfer to the plates to the steamer. And steam it for 10 to 20 minutes.
Once it it done, remove the plate carefully from the steamer and rest it for 5 minutes before transferring to the serving plate.
(It can be served with any curry but my favorite is our Kerala special vegetable stew.)
