Boondi Ladoo

Ingredients
For Boondi :
Gram flour /Besan Flour : 1cup
Baking Soda : a pinch
Water : 1/2 cup (adjusted as needed)
For Sugar syrup:
Sugar – 1/2 cup and 2 tsp
Water – 1 cup
For Frying
Cashew nuts : 5 to 6
Dried grapes : 5 to 6
Ghee : 2 tbsp
Oil to deep fry
Instructions
Making of Boondi
Mix well basin flour , pinch of baking soda and water together.
Mix well without any clumps with a
whisker. Make the batter as
pancake batter consistency.
Donot make it too thin or thick.
(optional - can add orange or yellow color of your choice )
2. Heat a Kadai vessel with oil Or a pan which can deep fry the Boondi
3. Add the mixed batter through a perforated spoon or boondi ladle
by spreading the batter with a
spoon or a spatula so that small
drops of boondi falls in the hot oil.
It falls drop by drop. As it falls into the hot oil, it will rise
back and comes to the top of
the oil. Don’t make it crunchy by
keeping boondi in hot oil for longer
time. Boondi must be little squishy
while squeezing it. When it’s fried, scoop it and keep it in a tissue to
drain oil.
4. Divide the Boondi into equal parts.
First half of Boondi put in a dried
jar and grind little bit. Donot make
it as powder. Just one or two swirls.
Making of sugar syrup
Mix sugar with 1 cup of water and start to heat in a pan. Once it starts to bubble up add 1/2 tsp ( can be up to 1 tsp) of cardamom powder and mix it well. (optional - if you want to add color, could add orange or yellow as your choice)
Making of Boondi Ladoo
When the sugar syrup is ready , reduce the flame to very low flame and add Boondi which is slightly powdered and the other half which was not powdered together and stir it well. Once Boondi is filled with sugar syrup nicely, then turn off the flame.
Mix with ghee roasted dried grapes and cashews
Take enough mixture into your hand and press firmly to make it into a Ladoo shape.
