
Kerala style Jalebi at home

Ingredients
Uzyunnu ( Urad Dhal ) 1 cup soaked 5 to 6 hours in water.
2 tablespoon of rice flour ( if you want extra crunchy)
salt a pinch
sugar 2 cups
water 1 and a half cup of water
cardamom powder 1 teaspoon
lemon 🍋 juice 1 teaspoon
Yellow or orange red color ( optional)
Ghee 1 tablespoon
Oil to fry the Jalebi
Instructions
Soaked urad dhal drain and grind well in mixture jar or a grinder with little water.
Mixture shouldn’t be runny , it should be dosa batter consistency. If it feels little runny , can add 2 tablespoons of corn flour to make it little thicker.
Add 2 tablespoons of rice flour (Optional if you want it extra crispy)
Pinch of salt to taste
Add color of your choice either yellow or orange red.
Mix all the ingredients together well without any lumps.
Keep the batter aside for 15 minutes.
Meanwhile will make some sugar syrup.
Add 2 cups of sugar with 1 and half cup of water in a pan and melt the sugar until it forms a thin stretchy film in between the fingers.
Add add a teaspoon of cardamom powder, ghee, lemon juice and the color
Keep the sugar syrup warm by keeping the flame lower.
Next will make jalebi.
Scoop the mixture to the cake decorating pipping bag with medium or small tip.
Heat the oil in a plain flat pan. Oil shouldn’t be not more than half of the pan.
Once the oil becomes hot , turn down the heat to low flame.
Squeeze gently the pip to the oil to make desired shape.
Once both sides of the jalebi fried, scoop the jalebi and shake off the excess oil.
Dip the jalebi immediately to the warm sugar syrup for 5 minutes.
Remove the jalebi from the syrup and keep it in a plate.
Decorate the plate with some pistachios.
Kerala special jalebi is ready to serve..
Its best served after keeping it in refrigerator for a day....
