
Uzhunnu Vada. (Medu Vada / Indian fried doughnuts )

Ingredients
1 cup of urad dal
1/2 tsp of salt ( adjusted as needed)
2 or 3 green chilies 🌶
1/2 cup of onions nicely cubbed
Couple of Curry leaves (can use coriander leaves instead)
Ginger 2 tsp finely chopped
Asafetida a pinch
Crushed pepper 1 tsp
Instructions
Soak Urad dal for 4 hours and grind well with a grinder without adding water.
While grinding add pinch of salt.
Grind well until the batter looks fluffy.
If you drop a small batter ball in ice cold water , it should float on water if it is in right consistency.
Mix well onions, ginger , curry leaves and green chilies with pinch of salt and asafetida.
Add these mixture to the batter with crushed pepper and mix well.
Heat oil in a kadai vessel on medium high, once the oil is hot , turn down the heat to medium.
Making of Vada
Dip both hands in a ice cold water , take a scoop of batter with your dominant hand and roll it 2 to 3 times to shape the batter and then transfer the rolled batter to non dominant hand which is also dipped in cold water.
Dip dominant hands finger into the cold water ( shouldn’t drip the water from the finger ), make a hole in the center of the batter.
Gently slide the shaped vada to the oil without splashing the oil.
When one side of the medu Vada turns to golden color , flip the side and fry it until it uniforms the color.
Give some space to each other while making Vada.
Now our Medu Vada is ready to serve....
It can be served with coconut chutney or with a coffee or a cup of tea.....
